Method for making Italian Ravioli:
Step 1: Prepare the dough – One cup of flour, one egg, two tablespoons of olive oil, two tablespoons of water, salt, knead until smooth, cover with plastic wrap and let rest.
Step 2: Mix the filling – Boil chicken legs until cooked, remove bones and chop, finely chop onions, mushrooms, grate Parmesan cheese, add black pepper, salt, various Western cuisine spices leaves: celery leaves, basil leaves, or simply buy dried Italian seasoning. Mix well.
Step 3: Roll out the dough – Divide a large piece of dough into three or four portions, use one at a time, ensuring the dough is not too thick, then cut into strips 3-4 cm wide, arrange the filling. The other strip should be slightly wider, then lay it over the previous one, seal, cut, and pinch the edges.
Step 4: Cut and press the edges with a fork to give it a decorative look.
Step 5: Boil the ravioli – After water boils, add the ravioli, once they float, add cold water, bring to a boil again, repeat this process three times.
Step 6: While boiling the ravioli, prepare the sauce. Italian green sauce, add lemon juice, sugar, rum, water, bring to a boil, taste, and pour over the ravioli. Sprinkle with Parmesan cheese and garnish with parsley leaves. Enjoy!
